Andrew approached me in the early stages of what would later become The Parting Glass - Bowral’s newest and finest cocktail bar. Andrew’s interior designer had a vision for a sultry, warm, ambient and different-to-the-usual-highlands-vibe space. There was a mediterranean feel to it with hints back to the roots of the old Scottish pub song by which the bar gets its name.
